Job Description


This apprenticeship will offer the successful applicant the chance to see first hand where our food is grown and get hands on with some harvesting and foraging. You will also have the opportunity to work alongside some of the South West’s most forward thinking and award winning chefs and bakers. This year will also give you a rare overview of the whole operation from the field to a successfully finished shift with nearly everything in-between. In a nutshell, learn loads about food, work in a lively team, and grow as a person, whilst studying towards your Production Chef Standard qualification.  



You will be working towards your Production Chef apprenticeship standard whilst work alongside bakers, chefs and cooks at The Long Table to learn first hand how to plan, source, prepare and serve great food and drinks to lots of people whilst working as part of a team, growing as a person and assisting in a range of duties- 



Duties include: 






  • Food safety training to level 2

  • Health and safety training

  • Basic first aid training 

  • Fire safety training.  

  • iAm induction and training [including C-Me and gift naming] 

  • weAre induction training. [including house rules, The Long Table vision and values] 

  • Sourcing food from wholesalers, farms, local growers, foraging.  

  • Processing and sorting surplus and donated food.  

  • Milling grains, pulses and spices. 

  • Fermenting food 

  • Pickling food 

  • Making preserves

  • Making sure the kitchen is clean, tidy and free of hazards 

  • Food preparation including basic knife skills 

  • Making butter and fresh cheese. 

  • Maintaining a sourdough starter. 

  • Baking buns, cakes and breads from scratch. 

  • Portion control

  • Presenting food in a creative manner in line with menu specifications and company ethos 

  • Getting food out to customers in a timely manner 

  • Using fresh locally sourced ingredients 

  • Assisting with recipe formulation.  

  • Assisting with menu planning, being creative and getting involved in the business aspects- costings etc 

  • Working alongside trained chefs/Bakers to gain cooking and baking skills and knowledge

  • Participating in team meetings and team development sessions. 

  • Working in a team. 

  • Tasting food and learning how to season. 

  • BBQ skills 

  • Smoking skills 

  • Rotisserie skills 

  • Frying skills [batters, doughnuts, churros, tempura] 

  • Roasting skills 

  • Paella pan skills 

  • Coffee making 

  • Morning set up kitchen and area tasks

  • End of shift closing tasks

  • Cashing up  

  • Basic financial overview. 

  • Event marketing and promotion.  

  • Bookings overview. 

  • Dietary requirements understanding.  

  • Washing up and glass ware 



Personal Qualities :

The Ability to work well under pressure, physically fit, good interpersonal skills and the ability to work within a team, creative and driven and willingness to improve and progress in this fast paced environment 



Skills Required :

Good communication skills, the ability to muti-task and take instruction, organised, clean and tidy and good personal presentation in line with current food safety standards, ability to measure/weigh out ingredients correctly to produce goods to correct specification in line with company ethos.
