Job Description

Principal Purpose 



Throughout the apprenticeship the post holder will gain experience working in the Team within the Catering Department. The successful candidate will develop the required skills to assist in the day to day operation of the section ensuring the delivery of a consistently high quality service to the Trust



The successful candidate will complete the Level 4 in Hospitality Management within 18 months




  • Ensuring the highest possible standard of food preparation and service

  • To comply with national nutritional policies and food hygiene standards

  • Providing food for patients, staff and the general public, as well as catering for special functions on request



Key result areas 




  •  Patient / Client care

  • The preparation, cooking, presentation and service of meals to the highest possible standards for patients

  • Provide food that complies with national nutritional policies and food hygiene standards

  • Ensure timely plating and delivery to patient areas, to support patient care

  • Submit requisitions for additional foods, stores depending upon demand

  • The strict observation of standardised recipes

  • Contribute to the identification and reduction of food wastage

  • Ensure correct storage and stock rotation of all food products

  • Exercise care in the use of expensive kitchen equipment technical ovens and chiller cabinets

  • To be familiar with, and assist in the security of the department and its contents


Personal Qualities :

Effort & Environment




  • Physical  

  • Required to regularly undertake moving and handling of kitchen equipment, bulk foods and supplies trolleys performed in accordance with Trust health and safety guidelines

  • Comply with annual moving and handling update requirements



 Apprentice




  • Undertake the daily checklists and records for HACCP

  • Perform a wide range of duties involving staffing, food delivery, time management,  whilst maintaining a safe environment

  • Work to tight schedules 

  • Provide peer support to colleagues in personal or professional context



Working conditions




  • Exposure to heat, humidity, and noise as well as exposure to the risks entailed in handling very hot foods, kitchen utensils and equipment

  • Will help monitor and maintain Health and Safety of self and others

  • Identify and inform manager of any potential risks

  • Take appropriate action to minimise any risks



Skills Required :

  • Communication and Relationships 

  • To project, at all times a friendly, helpful, courteous and professional manner to other staff, patients and visitors

  • Communicate effectively with colleagues to give and receive job related information

  • Effectively liaise with ward staff / patients regarding food or menu queries

  • To comply with Uniform Policy i.e. to maintain a clean, tidy and hygienic appearance, ensuring that the appropriate protective clothing and ID badge is worn at all times

  • Analytical and Judgemental Skills required for the post

  • Exercise judgement in response to portion control uptake and food wastage 

  • Exercise judgement with changes to recipes, cooking times etc in response to individual requests

  • Exercises judgement with production of individual patient specialised diets considering available ingredients and time available

  • Initiate emergency action when required

  • Planning and Organisational skills required for the pos

  • Plan own work on a day-to-day basis

  • Under supervision, plan, prepare and cook a wide range of dishes with different timings / methods to meet tight deadlines

  • Demonstrate flexibility and work in any area of the department if needed

  • Physical dexterity skill requirements

  • Good all round knife skills and expertise in the use of gravity feed slicing machinery acquired over time during training

  • Observance at all times of standards of personal hygiene and “clean as you go” principles



Future Prospects :

To develop within the role and move to a Band 3 position for the right candidate
