Introduction To Baking Apprenticeships
Mmm, we all love that aroma, don’t we? Is there any better smell than walking past a bakery - either a shop or a plant - and breathing in that air filled with the aroma of freshly baked breads, cakes, pastries or biscuits.

If you have decided university is not the route for you after leaving school and you are looking for an alternative, then Apprenticeships are ideal because you get on the job training whilst gaining nationally recognised qualifications. And the great news is, you also get paid a wage while you do them.

Whether you enjoy baking at home and you would like to take that passion into a career, or you have done some short baking courses and realised your passion, or you are already doing bakery jobs - perhaps you have a Saturday job - and you want to learn more, Bakery Apprenticeships could be ideal for you.

How do Baking Apprenticeships Vary?
As with all Apprenticeships, Bakery Apprenticeships will vary depending on your employer. Depending on the pathway you choose for your Apprenticeship, you might be doing craft bakery jobs in a high street shop that caters for local customers on a daily basis. You could be working in an on site supermarket bakery where the scale of production might be larger. Others of you might be working in a bakery plant doing bread baking Apprenticeships or cake baking Apprenticeships for famous national or international brands.

So, it really depends on the area where you live and your preference for the type of bakery assistant jobs you want to do. Bakery Apprenticeships are like doing baking courses except you are learning on the job and earning money rather than spending it.

And where these Apprenticeships don’t vary is, wherever you do your bakery jobs, you will still come out at the other side armed with the same qualifications that are recognised throughout the baking industry. Qualifications that can help you build your career in baking and eventually move into bakery manager jobs or that will help you become a master baker.

Also, a further advantage to doing Apprenticeship bakery jobs is you are perhaps more likely to be offered a full time position with the company, afterwards. And if the company isn’t in a position to offer you a role, then you have the experience and qualifications to look for other bakery jobs.

What Is Involved In Baking Apprenticeships?
It is an exciting time for Apprenticeships because the 2017-2018 academic year is the year that Trailblazer Apprenticeship Standards will be available across all trades and professions and the good news is, the baking industry has Apprenticeship Standards in 2 levels.
  • Apprenticeship Standard: Baker - Level 2
  • Apprenticeship Standard: Advanced Baker
Although these Apprenticeship Standards for Baker are not yet ready for delivery, they will soon be implemented. In the meantime, if you want to do baking courses and were hoping to do an Apprenticeship, don’t worry. You can still begin Level 2 Intermediate Baking Apprenticeships from the existing framework and start to learn all the baking skills you want to. When the Trailblazer Apprenticeship Standards for Baker are ready for delivery, there will be a transition and you will transfer over to this, continuing your Apprenticeship.

Let’s take a look at some of the skills you will learn and the pathways you can take with Baking Apprenticeships.

Level 2 Apprenticeship Baker
If you are doing bakery assistant jobs, Baking Apprenticeships at this level give you a broad understanding of your industry. You will learn specific baking skills that will help you, if you want, to progress your career. You will learn knowledge and skills such as:
  • Bread baking from scratch without using machinery
  • How to measure ingredients
  • Safe and hygienic storage of ingredients
  • How to use, maintain and transport machinery used in bakery jobs
  • How to finish baked products to a certain specification
  • How to work as part of a team
  • How to best communicate with other team members and also customers
And if all of that isn’t enough, Apprenticeships in Baking mean you will also get to choose a pathway for the type of bakery assistant jobs you want to do. You can choose to focus on:
  • Craft Baking - Baking Apprenticeships in this pathway will focus on producing individual products such as breads and cakes and confectionery.
  • In Store Baking - In Store Baking Apprenticeships will focus on developing your skills in stock control, packaging, finishing products, high quality customer service.
  • Automated Bakery - Automated Baking Apprenticeships are for those of you who work in large baking plants. You will build your skills in large scale production and learn how to work all that machinery needed to produce the baked goods.
Level 2 Baking Apprenticeships take around 18 months to two years to complete.

Level 3 Advanced Baker Apprenticeship
If you want to continue your baking and become one of the experts then you could think about doing Apprenticeship Standards for Advanced Baker. This will mean you can move from bakery assistant jobs to supervisory roles and, eventually, bakery manager jobs, depending on the size of the company you work for.

So that you are fully equipped to master your role, Apprenticeship Standards for Advanced Baker will take two years to complete.

Future Career Development After Baking Apprenticeships
The baking industry is a fast moving and exciting industry with new products and technology being developed all the time to advance the industry. Lots of people who do baking courses and jobs such as Apprenticeships then go on to be their own boss and run their own bakery business. You could become a master baker for a larger company or do bakery manager jobs where you are in charge of a plant or a high street store.

It’s down to you to decide where you want to take your exciting baking career.
