Sous Chef – Brighton i360

Brighton i360 is not your average hospitality site - and this is not your average Sous Chef role.
Right on Brighton’s seafront, i360 brings together a restaurant, bar, café, events space and visitor destination all in one iconic location. From busy brunch services and beachfront dining to large-scale events, private hires and packed summer weekends, the kitchen here operates with serious pace and variety.
We’re looking for Sous Chefs at all levels to join the team - whether you’re an experienced Sous Chef ready for your next challenge or a strong Junior Sous looking to step up in a fast-moving, high-volume kitchen.
This is a role for chefs who love fresh environments, busy services and being part of a team that delivers great food in one of Brighton’s most exciting venues.
The Role
As Sous Chef, you’ll support the day-to-day running of the kitchen, helping deliver high-quality food across restaurant service, events and hospitality operations.
You’ll be responsible for:
- Supporting the smooth running of day-to-day kitchen operations
- Leading sections and supporting busy services
- Assisting the Head Chef with team management and kitchen organisation
- Maintaining high standards of food quality, presentation and consistency
- Supporting stock control, ordering and kitchen prep
- Ensuring HACCP, food safety and hygiene standards are maintained
- Helping develop seasonal dishes, menus and event offerings
- Creating a positive, organised and team-focused kitchen culture
About You
You’ll already have experience working in fast-paced professional kitchens and thrive in high-energy services.
You might currently be a Junior Sous Chef looking to step up, or an experienced Sous Chef ready for a new challenge in a larger, more dynamic venue.
You’ll bring:
Experience working in busy hospitality kitchens
A genuine passion for food and hospitality
Strong communication and teamwork skills
Good organisational skills and attention to detail
Confidence working under pressure during busy services
Solid understanding of food safety, allergens and HACCP
A positive attitude and willingness to get stuck in
Experience with events or high-volume service is a bonus
