Following a significant investment and complete rebrand, Understory (formerly Heads & Tales) is an exciting new cocktail destination in Edinburgh's West End. We're creating a hidden Five-Star Dive Bar built around discovery, nostalgia and conversation, combining exceptional cocktails, genuine hospitality and memorable guest experiences.

As an evening venue, Understory comes to life after dark, creating an intimate atmosphere where every service feels special.

We're inspired by the World's 50 Best Bars and share the same ambition: to create exceptional drinks, unforgettable experiences and hospitality that sets the standard.

We're looking for brilliant floor staff to help bring that vision to life.

Whether you're an experienced server, a natural host, or someone with a genuine love for hospitality who's eager to learn, we'd love to hear from you.

The Role:

Every guest who walks through our door should leave feeling they've discovered something special.

As part of the Understory floor team, you'll deliver warm, intuitive service, guide guests through our food and drinks, and create memorable moments that keep people coming back.

This is a venue where every cocktail has a story, every dish has a purpose, and every interaction matters.

What You'll Be Responsible For:

• Delivering exceptional, personalised guest experiences.
• Learning our cocktail and food menus inside out and confidently sharing their stories.
• Delivering knowledgeable, engaging table service from welcome to farewell.
• Reading the room and anticipating what guests need before they ask.
• Working as part of a close-knit, supportive team.
• Maintaining outstanding cleanliness and presentation standards.
• Helping create an atmosphere that feels welcoming, relaxed and unforgettable.
• Taking pride in every drink, every plate and every guest interaction.
