The Rutland Hotel is eagerly seeking a dynamic, ambitious, and quality-focused Chef de Partie to join our dedicated and spirited kitchen team. Immerse yourself in a culinary environment serving three unique venues, each showcasing the finest sustainably sourced ingredients from Scotland's elite suppliers: Kyloe, an acclaimed 1 AA Rosette gourmet steakhouse; The Huxley, serving American soul food with Scottish flair, from breakfast through dinner; and Heads & Tales, an underground speakeasy perfect for sharing plates.


In this hands-on role, we're looking for someone who thrives amidst high-volume, fast-paced settings. You'll take ownership of your section, ideally bringing experience as a CDP or strong Demi Chef de Partie in busy, quality-led kitchens. Experience in a Rosette-grade establishment is highly desireable. You'll run your station with confidence and consistency, supporting junior chefs around you — so solid organisation, time management, and communication skills are essential.


Key Responsibilities:

  • Run your section to an exceptional standard, ensuring consistency, quality, and pace during every service.
  • Support the Sous Chef and Head Chef in delivering seamless kitchen operations across all three venues.
  • Contribute ideas to seasonal menu development, aligning with brand standards and guest expectations.
  • Follow and help uphold allergen procedures, food safety and COSHH practices throughout the kitchen.
  • Assist with stock rotation, proper labelling, and record keeping, adhering to Food Standards Procedures.
  • Guide and mentor commis chefs and junior team members on your section.
  • Minimise waste and work efficiently with ingredients, supporting the kitchen's cost control efforts.
  • Play your part in helping the team achieve the prestigious 2 AA Rosette certification.
